Castellari Bergaglio Gavi

Grappa di Gavi

This grappa is distilled in a bain-marie in two copper pot-stills on brick ovens, like those once used in the cellars of castles and villas in our area.

This slow, painstaking procedure is indispensbale in order to obtain excellent quality.

Inside the stills, the pomace is enfolded in a tepid cloak and gently swept with a breath of stem, to free it of alcohol and prestigious aromas.
