Grappa di Gavi
This grappa is distilled in a bain-marie in two copper pot-stills
on brick ovens, like those once used in the cellars of castles
and villas in our area.
This slow, painstaking procedure is indispensbale in order to
obtain excellent quality.
Inside the stills, the pomace is enfolded in a tepid cloak and
gently swept with a breath of stem, to free it of alcohol and
prestigious aromas. |

Origin: municipality of Gavi
Fraz. Rovereto (AL) – Piedmont
Varietal: Cortese di Gavi 100%
Distillation method: after a brief fermentation
cycle and while still streaming with must, the pomace
is placed in copper pot stills using the ancient
bain-marie system. The grappa obtained is aged in
vats for 8-10 months, and is then reduced in proof
with demineralised water, cooled, cold filtered
and placed in 500ml individually-packaged bottles.
Alcohol content: 42% Vol.
Appearance: crystal clear and transparent.
Bouquet: intense and long-lasting, generous
with light fresh herb aromas.
Flavour: dry with a smooth, warm vein; the
long finish has hints of liquorice root.
Serving temperature: 16-18°C. |
