THE VINEYARD

The grapes come from hand-harvesting in vineyards we cultivate to obtain the basis for a sparkling wine with a strong character and personality.

THE VINIFICATION

Alcoholic fermentation in steel with selected yeasts follows a soft and progressive pressing of the bunches with fractionation of the musts.
In spring, it is bottled with draught syrup for re-fermentation in the bottle and frothing. It remains on its lees for 18 months before disgorgement.

THE TASTING

Ardé is a sparkling wine sui generis, which already shows its gifts to the eye with its soft and inviting perlage, the prelude to a soft drink. On the harmonic level, the wine is at its best, ranging from notes of apple peel and yellow plum to elegant nuances of dried fruit and bread crust, from chamomile flowers to honey, from talcum powder to subtle balsamic tones of mint and medicinal herbs. Excellent as an aperitif, it will excel on fried vegetables and raw seafood. Daring, even on a citrus Bavarian!

Sept. 7-Sept. 8 2.5 kg per plant and 95 ql/Ha
