THE VINEYARD

This wine draws balance and drinkability from hillside vineyards in the municipality of Gavi. Its aromas are fresh, with intense and persistent hints of white fruit (pear), green apple, hay, good and distinct minerality, and citrine aromas (citron). It has an elegant taste, with good persistence on the palate, where the refreshing acid vein confirms the never demodé typicality of this Gavi. It should be served at ten °C in tulip-shaped glasses.

THE VINIFICATION

The grapes are immediately transferred to the winery, where they undergo a soft pressing to extract only their best part. Fermentation, at a controlled temperature, 18- 20° C, to maintain the typical richness of Cortese di Gavi's aromas), continues very slowly for up to 20 days. Bottling is done in February and March to allow the wine a minimum of bottle aging before release. 

THE TASTING

It is delightful from the spring following the harvest but reaches its greatest enjoyment after a few months of bottle aging. It does not fear a few years in the bottle.
